Cloud notetakers put a bot in the room and a copy of the call on someone else's servers. For privileged conversations that is not a preference, it is a blocker: it means a new sub-processor, a new retention policy to explain, and a visible recorder that makes clients guarded.
No third-party processor to disclose
Audio, transcripts and notes stay in ~/Documents on your machine. There is no vendor cloud in the chain, because the app has no server to send anything to.
Nothing appears in the meeting
Cachalot records the audio playing on your own Mac. No participant joins, no recording bot shows up in the attendee list, and it works with Zoom, Teams, Meet and phone calls played through your Mac.
Exact attribution of who said what
Your microphone and the other side are separate channels, so the transcript does not guess speakers. That matters when a note may end up in a file that someone else reads years later.
Recording consent rules differ by jurisdiction — in parts of the United States all parties must consent. Cachalot does not manage consent for you; obtaining it and complying with local law and your professional obligations remains your responsibility.
